250g paneer cottage cheese, cut into cubes 1 bell pepper capsicum, cut into cubes 1 onion, cut into cubes and separated into layers 1 tomato, deseeded and cut into cubes (optional) Marinade: 1 cup thick yogurt (curd) 1 tbsp gram flour (besan) 1 tbsp ginger-garlic paste 1 tsp red chili powder 1/2 tsp turmeric powder 1 tsp garam masala 1 tsp cumin powder 1/2 tsp chaat masala 1 tsp coriander powder 1 tsp kasuri methi (dried fenugreek leaves) 1 tbsp lemon juice 1-2 tbsp mustard oil or regular oil Salt to taste

Instructions

Prepare the Marinade:

In a bowl, whisk the yogurt to make it smooth. Add all the dry spices—red chili powder, turmeric, garam masala, cumin, coriander, and chaat masala. Include ginger-garlic paste, kasuri methi, mustard oil, lemon juice, and salt. Mix well. Finally, add gram flour (besan) and whisk to remove any lumps.
