Today was filled with creativity and joy as I experimented with new recipes after being inspired by a cookery show on YouTube. Life in a PG (paying guest) accommodations can be a challenge when it comes to cooking, but the satisfaction of a successful culinary adventure is worth the effort.

Sauteed Paneer and Cheese Green Salad

One of my latest experiments was creating a Sauteed Paneer with Green Salad and Cheese. The paneer, a popular Indian cheese, combined with a fresh green salad, created a delightful and innovative combination. Mango has always been one of my favorite fruits, and today I decided to combine it with Mango-Flavoured Sevai and Mango Pulp. Sevai, a tender, soft noodle item, is commonly served during the festival of Onam in Kerala.

The process involved making a creamy mango custard and serving it with sevai and mango chunks on top. This dessert was a delightful tribute to the king of fruits and a perfect way to spread happiness and joy through a sweet treat.

To prepare this dish, follow these simple steps:

Make a rich, creamy mango custard by blending ripe mangoes with sugar and milk. Boil the sevai and keep aside. Arrange the sevai on a plate and pour the warm custard over it. Top with fresh mango chunks for an added burst of flavor.

Banana Stem Dry Sabzi

Another interesting dish I tried today was a Banana Stem Dry Sabzi. Although this dish is quite common in regions like Kerala and Tamil Nadu, it seems less popular in other parts of the country.

Preparing this dish is time-consuming due to the need to finely chop and remove the fiber from the banana stem. However, the final product is absolutely worth the effort. The dish is both tasty and healthy, making it a great option for a vegetarian diet.
