1 lb refrigerated pizza dough 1 Tbsp olive oil 1-1/2 cups Shredded Sharp Cheddar Cheese 1/3 cup sliced green onions 1 plum tomato, sliced 6 slices cooked bacon, crumbled up 4 eggsSteps:
Preheat the oven to 375°F (190°C). Pat and stretch the dough into a 14×6-inch rustic rectangle on a baking sheet sprayed with cooking spray. Brush with olive oil. Top with 1 cup of cheese and half of the green onions, leaving 4 3-inch areas of the dough untopped. Crack one egg into each of these areas. You can crack them first into a small bowl if you're worried about getting the shell in the pizza, and then gently slip them onto the dough. Top the pizza with tomatoes, bacon, and the remaining cheese and onions, being careful to avoid topping the eggs. Bake for 23 to 25 minutes or until the crust is golden brown and the eggs are fully cooked. This breakfast pizza is not only easy to make but also incredibly tasty. It's the perfect brunch dish for a weekend meal with family and friends.
Shakshuka: A Time-Tested Breakfast Delight
For those who prefer a simpler and more traditional taste, Shakshuka is a tomato and egg dish that has roots in the eastern Mediterranean region. It's a flavorful and filling meal that can be enjoyed all year round. To prepare Shakshuka:
Heat some olive oil in a large flat-bottomed frying pan over medium heat. Sauté onions until they are very soft and slightly caramelized. Add chopped red and green bell peppers and cook until they are soft. Add fresh or canned tomatoes, cumin, sweet smoked red paprika, salt, pepper, sugar, lemon juice (if desired), and chopped garlic. Cook this mixture for about half an hour, keeping the lid slightly cracked to allow steam to escape. After half an hour, make divots in the tomato mixture and gently break in the eggs, ensuring the yolks are still in contact with the bottom of the pan. Quickly place a chopping board or lid on top and turn down the heat. Cook for about 8 minutes until the whites are cooked, and the yolks are still runny.Serve your Shakshuka on top of sourdough toast and sprinkle feta cheese and coriander leaves over it to complete the meal. This dish is a staple at our brunches, often enjoyed with either ginger or black tea with milk. It's a delicious and comforting way to start your day.
